Well, that trip I did 2 years ago involved 2 weeks of driving around in Canada, then hopped over to Seattle, picked up the Mustang and then drove all the way to San Diego, wherever possible taking the coastal roads (avoiding the 101 where possible), followed by a drive out to Vegas and the Grand Canyon, then back to LA... it was a fantastic trip, and being able to do it in an 8 would have made it so much better.
The road that heads up to Mt St Helens is also a fantastic one, you can't beat the scenery, but it's also pretty damn twisty near the end of it, a very good drive.
Basically, never a dull moment on that trip, always something to look at
