You might like some sections of route 6 in Peekskill. It looks like you take 87N to 287W/N then get off right onto route 9 and go up through. Eventually you get to route 6 and I've taken that path before coming from the east (CT) and it gets windy going up a ridge on the side of a mountain and eventually at the peak is a break (it's on the other side of the road though going North so I'd recommend it on the way back) where you can get out and oversea the river and is a historical point. Then you take a left to cross over Bear bridge which is nice and from there out you would continue north on 9W where I have no idea what's there after that since I stayed on route 6 to the interstate parkway to head south on my trip to PA.
It looks like however there is a lot of roads running up north and south going through mountains, parks along the river so it could be a good trail to try before catching up to 87 and taking that until your exit. You could do that on the way back or up and do 287W/N to 9W which goes all the way North and meets up to the same path I mentioned after you cross the bridge and that goes through a dense park/mountain area it shows on the map. Try one on the way up and the other on the way down.
