The Cobb A/P is a way of modifying (re-programming) the Factory engine computer to increase engine performance (among other things). Hymee in Australia has introduced a laptop-based tuning software that is said to work similarly.
The AccessPort system can download modified commands ("maps") to reprogram the stock computer to change operating parameters, or to allow for addition of forced induction (turbos & superchargers).
The Greddy E-manage series; Canzoomer; and Interceptor-X; (were) are piggyback units designed to add extra fuel and spark (or the opposite) to the engine by adding an additional computer between the engine computer's output and the engine.
Since the stock engine computer is quite sophisticated, uses many parameters and has many 'maps', the piggyback computers were not a complete or elegant solution to modifying the engine. Note though that the piggybacks were the only solution until the 'code' of the Mazda computer was 'cracked' by Cobb / Hymee / EFIDude /et.al in 2007.

The first time I saw one of the accessports at my local meet I wanted one then after my buddy and several others in the area started having problems with their car I backed away. I will stick with mods that dont directly affect the engine, the last thing I need is for one day to start my car and nothing to happen. Seen it happen a few times.

Ok, here it goes. The dude I was with had his car working fine that day but beforehand he had turned the car on a few times and it just died on him and didn't want to crank over afterwards. So he had flooded it is what i was told, I guess its possible to flood the engine with one of these? I'm not very well versed in these things but a few of these incidents that had happened pretty much steered me away. The second time his car just stalled while sitting at a light and couldnt get it to crank over again and had to have it pushed out of the way. He's alot more knowledgeable on these things than me but from what he had told me the accessport was to blame.

the ap cannot ruin your engine unless you tune a map yourself and do not know what you are doing

no, unless you do as was mentioned above....do your own tuning on the maps when you have no idea what you are doing.
The person you were talking about having these issues, has different problems with the car that need to be sorted out before he even uses the AP in the first place.
