Stock the 8 has been listed as having 0-60 times of 5.9s, 6.1s, 6.4s and 7.1s in various mags, etc.
Frankly with the DSC switched off, when my ride was stock - there is no way that I will hit 5.9s, 6.1s or even 6.4s without launching perfectly. Period.
Fact is we aint perfect. Even the most experienced drag strip racer will have their off days and miss a gear shift, react a lil slow, etc. Realistically most of us will clock in anywhere between high 6s to low 7s.
In addition as someone else pointed out earlier, and rightly so, the 8's acceleration 4th gear and on.....sucks. So that in itself will hamper your quest to reach 120mph quicker than the Golf.
The Golf GTi.
Listed at 6.9s for the 0-60 sprint and it WILL get you there. Every single time. Why? Simple - it has an in built launch control function. Not to mention it accelerates like a beast thru the gears courtesy of its silky smooth DSG gearbox. Just keep your right foot planted and keep shifting up (yes up!) once you hit the power band. Oh and DSG will probably shift faster than you and I would AND it will blip the throttle for you to keep the revs up as well.
As with any FI car - the results when you mod them will be amplified.
Take for example.
I've installed the TRUST Titanium Catback Exhaust that weighs just 6.9kg and gained a 'whopping' 7bhp.
ANY half decent aftermarket Golf exhaust will net you 25bhp. Easily.
I've done the Knightsports ECU remap and gained a 'massive' 10 - 12 bhp.
A stage 1 tune for the Golf will net you up to 245 bhp.
A stage 2 swap will get you up to 275bhp.
A stage 3 will get you up to 320bhp.
Stage 2 will cost 6k over here which would make it roughly USD 3.9k. Couple it with just an aftermarket exhaust and you will have a 300bhp ride.
I guess what I am trying to say is that for cost of modding and sheer straight line speed? The Golf will beat us hands down unless we spend twice the amount and go down the FI route.
Am I a fan of the Golf? Sure.
It is however pretty dang boring in the looks department. I mean it is a hatchback vs a sports car after all. The interior, while upmarket - is typically German which makes it well fitted but ultimately boring. Also the handling, while good - will not be as good as the 8's.
End of the day it is entirely up to you and what you want out of it...but why not spend a lil more and go FI? Then you'd get the best of both worlds. Exotic looks and the speed to match.
Either way best of luck with your choice.

And the launch control you speak of is a program that must be loaded at the dealership, then you must do a sequence of pulling on the paddles to enter the launch control mode. It isn't a "standard" thing that a grandma can use

The launch control is a feature on the Golfs in this region and I'd assume would not be that expensive an option back in the states. I mean heck 9 outta 10 who actually buy the current gen Golf must be a petrolhead in some way, shape or form and purchasing the launch control as an option would be a no brainer. I'd buy it and I suspect you would too
Lastly given that this is going to be a drag race - I'm sure that the Golf driver would be inclined to turn it on anyhow assuming they had it. Besides the Golf is a pretty popular car over here and the modding scene is pretty lively. I agree that the stock way of engaging launch control is a little troublesome....but they already have a kit out that bypasses it all. Think engine start button
