The avelectronics setup includes a hard wired FM modulator to play sound out of any of the input devices (including the xbox). You can use your xbox just as you are planning. The only issue will be where to mount the xbox.

I have a pS2 mounted in the cargo tray in the trunk hooked up to my avelectronics and the rear facing camera license plate frame hooked up to it as well. Works great!

Also have pentium based carputer with lilliput 7" touchscreen for playing DVDs, MP3s, onboard car diagnostics and dynometer using autoenginuity's OBDII/CAN adapter.

Not hard at all. The centre console comes out in about 5 minutes, the radio comes out in about 5 minutes. The Unit gets wired up from the trunk/back of the back seats. The wires you need to tap into are directly under the center "door" between the back seats. You only need to remove the radio to plug in the FM Modulator for sound. It plugs in between the car's antenna and the radio (No wires to cut there)
