You can easily remove the belt for the AC compressor. If I remember, the entire system weighs 18lbs so there is some weight loss if you want to go that route too.
Problem is that the AC won't kick in at WOT and high RPMs so there isn't much of a point. Also consider that turning the AC off is essentially removing any parasitic loss since the pulley for the compressor will just be free spinning.
Do it if you want, but there isn't much of a point unless you remove the entire system for the weight loss. Even then, do you want to go through that for 18 pounds??

i had my a/c on during an HPDE.
i was still passing people.
my driving skill (while allowing me to constantly pass people in the green group) just wasnt high enough to make a difference for the few seconds the a/c would be on. and as pointed out, the a/c shuts off above 65% throttle and 5500rpm.
