Either you are running too lean and the heat is killing your cat, or you are running too rich and you are killing your cat. If you run too long between coil and/or plug changes, then you aren't getting a complete burn, meaning excess fuel and that can fry the cat.
If you have flooded at all on each cat, that can kill it all on it's own.

What did the dealership say exactly about the AEM intake?

Glowing Red CAT just 55 miles? you must be running pig rich at all times but just BARELY under the limit for CEL.
AEM intake causes it ? If you install everything correctly. Send me your AEM logo Pipe I will swap my Mazda speed with yours. Just to shut them up.
Im on my 2nd CAT. First cat died in like 8K miles. now Im at 55K . no problems so far (but Im expect it to die at some point in the near future. just before the warranty runs out)

Catalytic Converter is warrantied for 80,000 miles with the EPA. Tell them they need to figure out what is going on. I would suggest putting your factory air filter assembly back on and see what happens.
