Your heater switch (temp switch), or the HVAC control, could be broken.

I had mine replaced once.

Low coolant? Kinked heater hose? Blocked fluid flow for some reason?

Im having a similar problem & have it scheduled for the shop tomorrow. I'll let you know how I make out, tskelton.
I went all the way to work one AM with no heat & then it worked. Now, I cant regulate it well. The heat seems to be very hot or cool. I reset the temp control & then it goes back & forth again. I cant get a nice, happy medium. Third winter Ive had the 8, & this wasnt a problem before.

do you get in the car and drive, or do you let it idle while you're in the house doing other things while it warms up? rotaries take a while to warm up to operating temp when driving at a constant speed or idling(which can take as long as 30min)

when the sun is out, of course it will warm up faster

My car is in the shop overnight now. Was told by the service mgr. that's it's the A/C unit that is not working properly & that's why Im getting cold air instead of warm. (?) Hope to have it back tomorrow (Tues). I'll let you know what the final conclusion is. They gave me a Mazda 6 to drive in the meantime; nice, but not an 8.

Just got my 8 back. Work order said "replaced heater control." That doesnt sound like what the service mgr told me originally. It also says "installed 5555" (is that the part #?). It's still under warranty, so no big $ deal for me. The heat was blasting on the way home, so I guess that was it.

Hopefully you're under warranty still. I had three hvac related parts replaced for the ame thing. Worked intemittently. If you get on your back in the driver's footwell and look up towards the center console you'll see a thin, vertical metal rod. About 3 in long or so. Play with the temp control dial to the extremes and see if it moves. Tap it if it does not. The heat will work fine the dial has a lousy servo.

Gonna hafta try that on the back routine. Mine is intermittent but mostly unavailable. I did notice this summer that the A/C would run hot for a few seconds every now and then for no reason. Not the usual substandard stop light air we know and love, but actual heat. I wasn't too shocked when the heat didn't work. Seat heaters work though. I did check the footwell fuse and the one under the hood and swapped relays with the seat heaters just to check. No help. May be a developing issue on '04's.......
