K-type thermocouple as IAT probe.
I have a K-type thermocouple that was intended to be used as clamp on EGT probe, but I want to slip it inside my post-intercooler intake track and use it to record IAT. Any reason that this will not work?
If you haven't ever played with a thermocouple, please dont post.
I will try it out just to see. I cant imagine why I would not report SOMETHING. It might not report correctly or timely, but it is a start.

There is a nice Delco IAT sensor that is designed for quick response and an automotive environment
I can look for the part # if you want...I think it was about $20 last time I ordered one
K type will work..but it is designed for a much broader temp range..and the resolution wouldn't be the best for the application
