Several people have had problems with the sensor inside the coolant tank.
I believe you need to swap the tank for a new one as the sensor is built-in (or in a weird enough spot that it's just easier to swap the tank), for someone can correct me if I'm wrong.

Because most techs at a dealership are monkeys that can only follow repair procedures in a manual.
They can't diagnose issues properly, they aren't aware of common problems with many cars, especially the RX-8 since they see so few of them, and they don't take the time to figure things out.
I get most of my problems fixed from crowd-sourced opinions on this forum than anywhere else. The dealership is fine for spotting a blown strut when changing a tire, but anything more complicated then that you better hope you have a tech who knows what he's doing (thankfully I have one of those and I ask for him every time).

Mine did that for a while... When I added a little bit of coolant it stopped. The reservoir is pretty hard to read, so on mine I thought it was at the full line when it was actually just a little bit short. See if adding a little will make yours stop coming on...
Also, The Wulf is right, there have definitely been known troubles with the sensor... The dealership not knowing just means that they don't know their stuff haha. So it could be that your sensor is just acting up some.
