What I'm thinking is, is there may be a height difference (pressure plate) between stock and the new clutch/pressure plate you bought. If the pressure plate is not as tall as the original pressure plate, then you may not have as much pedal travel. Thus not allowing the clutch to fully disengage.
This clutch package was made specifically for the RX-8?
Have to ask,, is your floor mat bunched up under the pedal?

check the travel on the slave cylinder, make sure its really being actuated. if that is right then you may have a pilot bearing issue. your input shaft sticks on the bearing and it acts like a fully engaged clutch. with the car in neutral and the clutch pressed see if you can easily put it in a gear, if its difficult to do so then keep pressure on the shifter and shut the car off, if it goes into gear easily then you may have damaged the pilot bearing on install

see i can put it into gear easlily and everything it just wants to lunge forward if you have your foot on the clutch in gear and trying to start it, like you dont even have your foot on the clutch pedal but i do

whenever you diassemble any part of the clutch system, including removing the slave for only pulling the tranny, you have to reset all the clutch pedal adjustments to spec per the factory manual. I've posted all those procedures somewhere on the forum before
