confused

First off first post on rx8club
I have a 05 6sp 23k miles. No engine issues other than a touchy idol, bought from sketchy liar who didn't speak much of my language so communication on what was done with the car (ie: I was told in order for the dealership to disconnect the powerstering purposefully they would "drain the fluid" out of the system)
Car came with fat k&n intake, hks exhaust, teins on tokicos, a "door open" light that drains the battery
Car came wihout heater capabilities (haven't looked much into it) ,windshield wipers, clean title
Also, I own a 04 4sp auto with 103k miles on its second engine. Only reason I know is because of the blue plate on the motor. Clean title, skirts 6cd changer wing haven't looked up what specific model it is
Now to my confusion
I have driven both cars on freeway traveling at 80+ mph with cruise control on. Traveling from phoenix to flagstaff which is a 5000ft+ elevation change and complete climate change and both cars when using cruise control. For longer than 10 minutes go into what I feel is a "gimp mode". Both cars when warmed up and freeway bound. Give me a slow reaction time.
Take into consideration that most cars are mid 80s toyotas and this is the fastest car I've owned so I feel I have a pretty unbias opinion on what is a slower acceleration is even when in a gear that should hold its own, or when I'm using tiptronic (auto gearing terrifies me) and being in a gear that should let me travel on an upgraded hill and not have people passing me like I'm in a minivan.

What does powersteering have to do with fluids?
