CA Cooling fans not turning on

HI I did a lot of searches found out how to replace fans, lots of worried people about there fans running after car is turned off. I live in the High desert of So Cal so drive in hot weather most of the time during the summer. My fans would always be running when I stopped in the garage at home. Now they have stopped running unless I have done a really hard drive, 80-90 mph up the pass, and like I indicated they used to run almost all of the time now only sometimes. Question is what and where do I start trouble shooting. I'm a fair mechanic but I need to know where to start, since I do not have any books. It is an 05 Sport with 39k miles.
Thanks for any help in advance.
PS this is the most fun car my Wife has ever owned.

Check the fans first....jump the relay triggers and see if the fans run normally

If they do then check the coolant temp sensor...

Then the wiring harnesses between those and the ECU

Still no change...then maybe the car isn't hot enough to trip the fans
