Multiple issues
I apologize in advance for not knowing nearly as much as I probably should about my car. I bought an '04 with just over 28k miles on it, back in 2010, I currently have just over 53k miles on it. Up unitl a few months ago, it was relatively problem free. Just this past monday I took it into a Mazda dealership for the Airbag light being on as well as the Coolant light turning off an on for just a few minutes at a time but the temperature never changed.
I was told that the Airbag harness as well as the sensors needed to be replaced, and the Coolant resivor had a sensor that was sticking as well and that they would be replacing the resivor and a radiator hose would be replaced. I was scheduled to pick up the car on Wednesday, and when I went to get it they told me that it wouldn't be ready until the next day, after my service advisor went to check the status and came back saying that there were 3 mechanics working on the car. The service advisor called the next day and said that they were having issues putting the airbag harness back in and that it would be finished by the end of the day on Thursday.
I picked it up last night, there was a good amount of traffic so I didn't get to really drive it the way i normally would. On my way to work this morning, i noticed that the car was a little sluggish while accelerating and once i got up to about 70 mph, the car started shaking, it would not accelerate and the RPMS stayed the same and the check engine light came on. I pulled over as quickly as possible, left the car running and it seemed like it was going to turn off. Eventually got a tow truck to come out and take it back to the dealership. Can someone please tell me what could possibly cause this. I don't know that I believe the dealership regarding the difficulty of putting the airbag harness back in and am concernd that somone messed something up and they don't want to tell me.

Don't know what caused this, but sure sounds like the dealer caused this engine problem to happen – unless it's a real coincidence. For now, I'd just let the dealer correct the problem, and make sure you keep all paperwork. Ball is in the dealer's court.

Dealer just called back and said that there was a misfire code and that i need to replace the Spark plugs, Coils, Ignition wiring as well as the battery which is only 3 months old. Did this really all just happen over night?

Tell them not to change your battery, since its brand new, and you will replace it at the place you bought it if it truly is bad.
Next up, look at the threads for replacing the plugs, wires, and ignition coils.
If you can do that work yourself, it will save you many hundreds of dollars rather than paying the dealer to replace all of those bits.

Coils can go bad after 2-3000 miles. You can get those from oreilly/autozone for $30 a piece with lifetime warranty, every 10,000 miles just get brand new ones. Its an awesome deal, BHR coils are definitely better.
