If that valve stays closed, and you have an OEM intake, then Im assuming that no air will go in (or very little) which would cause you to stall out

Thanks man, I'll check out that vfad. It has been out of my hands for a few days, but i'll see to it asap.
So, interesting story: After seafoaming and that failing to make it run any better, my mechanic took it to Mazda for a diagnosis. I get a call that afternoon from him, and he has me talk to the mazda tech. Basically the mazda guy said that in order for him to have one of his rotary techs to even glance at it, he would have to have a TWO THOUSAND DOLLAR deposit first. I kindly let him know that I forgot my lube, and my hole doesn't stretch that wide.
Luckily, there is a place nearby in Centerville called ExtremeAuto that has very good reviews, and an experienced rotary mechanic. My car's there now, and I should hear from them soon.
Don't go to Bountiful Mazda.

Good news- I got a bit of intel last night from extremeauto.
"The first thing we have ordered is the front o2 sensor (due in thursday) , it has been spliced and is not reading, we are going to install this as a known problem that will affect the air fuel mixture etc. I'll call you with update either Thurs. or friday."
Looks like my first mechanic spliced in the o2 sensor and failed at it. Hooray. Perhaps I'll get to drive home today.
I may have been out of a car for 10 weeks and got screwed on a lemon, but I'm not stressing on it. A lot of people have a lot more problems than waiting for their racecar to be fixed.
No word on the vfad yet, but maybe the o2 sensor is my golden egg.

good man, keep us posted. Dont get discouraged by the issues, these cars can be tempermental. Ive been battling drivetrain and electrical gremlins for 10 months now, but I love the car so for me I view it as a part of the hobby.

Itll be running soon man, sometimes stupid small issues can cause the car to not run right. My car has stalled out and not started so many times and everytime its something that is small (as in under $500). Ranging from a toasted battery, bad coils, clogged cat, etc etc, Ive seen most of it

ALRIGHT! It's finally a racecar again.
Extremeauto in Centerville is legit. They are honest, and they break down each step of what went down. Highly recommend.
As for what was wrong...

The Oxygen Sensor had been spliced in place.
"Spliced" means it had been cut apart, and installed incorrectly, presumably because the mechanic couldn't figure out how to install it correctly.
They replaced it with a new one.
One spark plug had a crack in the porcelain near the electrode.
After the o2 sensor and the plug, it was still running rough. They checked for vacuum leaks, and found none.
Further diagnosis involved removing the intake for inspection, and they found: "Injector plugs not plugged into the right injectors. Corrected connections, made sure injectors were ok, and found repair complete."
He also told me over the phone that they had been installed backwards.
Final cost came to $915.20 to get the batmobile back in action.

Thanks for all your support and help guys. I'll see you around the forum!
