Which Strut Should I Get?
I find myself needing to replace my rears on my 2004. I currently have an all Mazdaspeed suspension (struts, springs, sway bars). Aside from the fact that its difficult to find Mazdaspeed struts now, if I go with Koni (which Racing Beat could get to me tomorrow or I could drive there), would that be a good setup to go with the MS springs? Looking through old threads and vendors there isn't a lot of other options other than coilovers which is out of my price range on a car with 155k miles (original owner).
Any advice other than to call Racing Beat?

I would buy my Tokico D-Specs (used).
And, I would install all 4, to get adjust ability on all 4 corners. PM if you are interested. They are in the for-sale section. I pulled them because I thought the springs were bad, turns out it was bump stops. If I had not just installed the coil overs, I would have gotten 2 bump stops and put them back in.

Don't buy any struts, the RX-8 has shocks
I recommend KYB gas adjusts (search here for install thread), great with lowering springs. I had them before with S techs before I got coilovers and we have two locals with KYB's and S techs and they love the as well. I have known several people with premature Koni yellow failures and two locals with D Spec failures and the last guy is still hassling with getting them covered under warranty a year later.
